It’s often roasted, though you can eat the fresh stalks and leaves uncooked. The reason you want to eat it is that it’s high in copper, folate, magnesium, and potassium. It’s also low calorie with just 34 calories in 7 ounces.
Kohlrabi
You’ve probably seen kohlrabi in some markets and stores. The vegetable looks a little like a turnip, but it tastes nothing like it. Kohlrabi is actually related to cabbage and has a very mild taste that may remind you of a broccoli stalk.
Kohlrabi is very high in antioxidants like vitamin C. You’ll also find high quantities of vitamin B6 and potassium. Peel the fibrous outer layer first and then serve it raw or cook it the same way you’d cook broccoli stalks.
