You want to join your mom on a quest to eat healthier in 2018. It’s a great goal to have. Here are four unique and very healthy foods to try in 2018.

Amaranth

Amaranth is a grain that’s a great source of fiber, iron, magnesium, and protein. It’s use dates back to the Aztecs. You can use it in bread recipes. Cook it like it’s steel cut oats for breakfast. Serve it like polenta as a nutritionally sound side dish.

Use amaranth in place of rice in dishes like stuffed cabbage or stuffed peppers. Coat chicken strips with it for healthy baked chicken fingers. Look for amaranth in the grain section of your local health food store. If your grocery store carries Bob’s Red Mill brand products, you might find it in the store.

Barramundi

If you can find barramundi, try it. The Australian fish tastes a bit like snapper and has high levels of healthy omega 3 fatty acids. As a result, some people are turning to barramundi in place of salmon as a healthy seafood option.

One of the reasons why is that barramundi can thrive in water that has lower oxygen levels. In a farm environment, barramundi require lower amounts of food and do well eating fish scraps from seafood processing plants making it a better choice for the environment.

Cardoon

Cardoon is an odd vegetable. While it is related to the artichoke and shares a similar taste, it looks a little more like celery. It’s often roasted, though you can eat the fresh stalks and leaves uncooked. The reason you want to eat it is that it’s high in copper, folate, magnesium, and potassium. It’s also low calorie with just 34 calories in 7 ounces.

Kohlrabi

You’ve probably seen kohlrabi in some markets and stores. The vegetable looks a little like a turnip, but it tastes nothing like it. Kohlrabi is actually related to cabbage and has a very mild taste that may remind you of a broccoli stalk.

Kohlrabi is very high in antioxidants like vitamin C. You’ll also find high quantities of vitamin B6 and potassium. Peel the fibrous outer layer first and then serve it raw or cook it the same way you’d cook broccoli stalks.
