No-Bake Apple Pie: Quick. Easy. Delicious. 

When it comes to flavors of the season, it is no contest that apple is the go-to for September. Apple trees are full, and apple cider is plentiful. Even the coffee shops are coming out with apple-flavored drinks and desserts that cater to the season.

But there are not any scrumptious desserts that are popular than good-ole American apple pie! Warm, sweet filling with a buttery crust, it’s one of the best comfort foods you can make in a kitchen. However, some may feel it is too much trouble. Some may not feel confident in their baking skills. That is why this no-bake apple pie recipe will thrill any apple pie connoisseur and will please the palate of anyone who eats it. A graham cracker crust and homemade apple pie filling are all you need for this easy recipe.

No-bake recipes, especially dessert ones, are an absolute godsend. They allow anyone to throw together something sweet and delicious without the need for an oven. Making recipes perfect for kids who enjoy cooking and the elderly who love to cook in their prime but aren’t as comfortable in the kitchen anymore. Now that fall is approaching, who doesn’t want an easy apple pie, ready to eat in a few hours?

This no-bake apple pie does make a few departures from a traditional apple pie, but thankfully the right blend of Jell-O and pudding mix makes for a delicious filling. Just add some apples and pour it all into a delicious graham cracker pie crust, and you are off to the races.

What you’ll need:

  • Apples – The best apple for this recipe is a classic Granny Smith, but plenty of other apples would work. Since this is not a baked pie, you could use something that would traditionally be too soft. Give it a try with a Pink Lady or a Honey Crisp, and see how it goes!
  • Apple Pie Spice – Don’t have any? Mix together 4tbsp ground cinnamon, 2 tbsp ground nutmeg, 1 tbsp ground cardamom.
  • Lemon Jell-O, the small box
  • Vanilla Pudding Mix – Cook and Serve – this recipe uses the large box
  • Vanilla extract
  • 10” Graham Cracker Pie Crust
  • Graham Crackers – To crush and use as a topping (optional)

What to do:

  • Prepare the apples – Core, peel, and slice them
  • Toss the prepared apples into a large sauce or stockpot and set it on the stove over medium heat
  • Add some water, the gelatin mix, and apple pie spice to the apples, mix and let heat up
  • Once the mixture reaches a boil, bring everything down to a simmer and let sit for about 20 minutes, or until apples are tender.
  • When apples are tender, add in the pudding mix. Now the filling needs to cook and thicken…about 10-15 minutes
  • Once the filling is thickened, add the vanilla, and it’s ready for the crust
  • Now that the filling is ready, carefully transfer it to the crust
  • Allow pie to cool and then send to the fridge to set for about 2 hours
  • Before serving, top the pie with the crushed graham cracker

This pie is excellent served cold, but toss it in the microwave for a few if you prefer warm. Feel free to top with all the traditional toppings; a little whipped cream or a scoop of ice cream, maybe a drizzle of caramel. Enjoy!

Ingredients

  • 6 apples cored, peeled and sliced
  • 1tsp Apple Pie Spice
  • 1 ¾ cup Water
  • 1 3oz box Lemon Gelatin
  • 1 4.6oz box Cook and Serve Vanilla Pudding
  • 1 tsp Vanilla
  • 1 10” Graham Cracker Pie Crust
  • ¼ cup Crushed Cinnamon Graham Cracker Topping

Instructions

  1. Heat apples, water, apple pie spice, and gelatin in a large pot over medium heat
  2. Bring to a boil, then reduce heat and simmer for 20 minutes, until apples are tender
  3. Add vanilla pudding mix and cook until thickened (about 10-15 minutes)
  4. Remove from heat and add vanilla extract
  5. Transfer to pie crust
  6. Refrigerate for at least 2 hours
  7. Sprinkle top of crust with graham cracker crumbs
